Are we stuck with GMT-8?

Or will we be able to change the time to our own time zone? I went looking for the place to correct it, but couldn't find it in User CP.

No. The time is only set -8 to show unlogged in users and guests. It should be in your CP options somewhere.

After you click the "User CP", scroll down to "edit option". Then if you look for the heading "Date & Time Options" you will see the area to which you can modify your time zone.
