Potluck Recipes

I am going to a potluck on Saturday. Does anyone have a favorite recipe?
It can be any category..main dish, side dish, dessert...
Looking for something really yummy....and fairly easy.

My "Breakfast Pizza" is always a huge hit. Everyone that's had some, asks for the recipe. :o :D (In fact, I'm baking one right now!)

The "Chicken Casserole" is really good, too. :)

I've never come home with any leftovers, even though I'd LIKE to, when I make the "Crockpot Dinner" (or some people call it Calico Bean) recipe that my late aunt Mary Ellen used to make...

Fairly low cost. And it's easy to make -- all done way ahead of time. Tastes good hot or warm or even cool or cold.

1/2 - 1 lb ground beef
1/2 - 3/4 lb bacon, cut in small pieces
1 c chopped onion
2 cans of the large size (1lb 15 oz) pork & beans
1 can (about 1 lb) kidney beans, drained
1 can (~l lb) butter limas, drained
1 c ketchup
1/4 c brown sugar
3 T white vinegar
1 t salt
dash of pepper

Brown ground beef in skillet, drain fat and put in crockpot. Brown bacon and onions. Drain. Add bacon, onions and remaining ingredients to pot. Stir together well. Cover and cook on low 4 to 9 hours.

My notes:
I've used ground turkey, but usually prefer ground beef.
I've substituted soy bacos/bacon bits for the bacon.
I've used other beans when I didn't have kidney or limas, but those two do make it LOOK especially nice.
I often add crushed garlic when I have it.
I've used molasses or sorghum for all or part of the sugar.
I usually use cider vinegar instead of white.
I often add some chili peppers or red pepper flakes.
I usually add dry mustard.
If it's really 'soupy' and I don't have time to cook off the extra liquid, I add some TVP and cook an extra 30 minutes or so.
It's good no matter which of these changes you make...or don't make...

I make this amount for the older crockpot I have - one of those 1970s ones that's about 3 quarts in size. Sometimes I add extra beans - depends on my mood... ;)

When I use the 5 or 6 qt crock cooker, I just toss in more cans of beans.

Texturized Vegetable Protein...

in other words, pre-cooked, dried soy protein - it's light and fluffy... It's the one without much flavor, if any...

Ohh, ok. I have never heard of TVP. The recipe sounds scrumptious.

I don't have any TVP... you can just tip the lid for those extra 30 minutes and get about the same result... or turn down to warm or turn off the heat and let it cool down a little (then stir) with the same result...
OR what I usually do is DRAIN (most of the liquid off) the P&Bs (4 - approx 1lb cans) to start off.

quite true... just had some in the freezer that I thawed for lunch...

The great thing about that 4-9 hour time span is that you can mix it together right before you go to bed and it is ready to take to "somewhere" in the morning for lunch (keep it on warm or on low part of the time)... or you can mix it first thing in the morning to take "somewhere" where it can cook until noon OR dinnertime. FLEXIBLE!

The Crockpot Dinner sounds yummy. I am going to have to try that.
It sounds perfect for a potluck and should travel & keep well. We will be going up in the mountains over some crooked roads, so will have to anchor the crock pot well. I just hope I can carry it up the steep drive to their house when we get there!
My DH will be toting his instruments, and they are heavy enough.
I love living here in the foothills, but sometimes it can be a challenge. :)
Should be fun though, lots of good food and good music.

"Layered salad" is a good potluck dish.

Layered Salad (make up from up to 24 hours ahead to just a few hours ahead, the longer it sits the better)

In a 9X13 Pan

Place a layer of lettuce, either plain from the head or with from a bag, with or without other veggies in the mix

Then layer in any order (you can use them all or just some)

Chopped hard boiled egg
Diced onion
Chopped Cauliflower
Crumbled Bacon
Frozen Green Peas
Any other salad veggie you like that isn't "wet" (ie tomatoes or cucumbers)

Top with a mixture of Miricle Whip & sugar to taste and then shredded cheese

This is another one of those flexible receipes. The veggies & other toppings I listed are the ones I like in it the best, but if you don't like some of those you can leave them off and/or substitue what you have/like.

That Layered Salad is yummy - my mom makes that for when there's a bunch of us home for dinner. She uses chopped brocolli instead of the cauliflower and adds raisins. Otherwise it's the same.

I want some now. :)
