General Diet (I hate that word) Tips

I didn't have anything specific to add to the fish thread because I'm not very creative in a fishy sense, but I wanted to share some ideas I've had about calorie (yes, they count) conscious eating.

-Knorr and other sauces in packages. You know how they often call for some ridiculous quantity of oil? I've made them substituting nonfat milk for the oil and they come out just fine. The cream sauces of course.

1/2 cup nonfat milk = 40 calories
1/2 cup oil = 800 calories

-Parmesan cheese. A tablespoon is 25 calories and packs a ton of flavor. Hint: use it after cooking the dish, rather than in the dish itself to get the most bang for the buck. I find that cooking with it mellows out the flavor which means I need more to satisfy my tastebuds.

-Sour cream. Not generally thought of as a diet food. But 2 Tablespoons of sour cream are only 60 calories. On top of scrambled eggs, or chicken and mushrooms, etc., those 60 calories make a "diet" dish seem truly decadent. Not only that, but the fat content in sour cream satiates hunger.

-Half 'n' half. Again, not usually thought of as a diet food. But I use it as a substitute for mayonnaise in egg salad. I use about 1 Tablespoon for three hard boiled eggs - you'd certainly use more mayo than that, but even spoon for spoon:

1 T mayo = 100 calories
1 T half 'n' half = 20 calories

-I debated long and hard about sharing this one. I don't want this stuff to fly off the shelves. However, since about half the people who try them hate them and half love them, I think I'm safe. Tofu Shirataki noodles. http://www.hungry-girl.com/chew/chewdetails.php?isid=467 Please note and do not take this lightly if you try them: When you open the package, they smell horrible. You must rinse them once or twice thoroughly in a colander to get the smell out. Once you do that, they just smell like starch or noodle or whatever. They aren't a perfect replacement for pasta, but at the difference in calories, they are sure worth a try. I like them fine.

4 oz Tofu Shirataki Noodle = 20 calories
4 oz spaghetti = 420 calories

-As kind of an addition to the nonfat milk substitution in the Knorr sauces, you can make a generic white sauce using nonfat milk also. Either diminish the butter to less than one tablespoon to make your roux, or put flour and a splash of the nonfat milk in the pan over low heat to make the roux. This takes a little practice, but I hate wasting calories on things like butter and oil unless I can really taste them.

-Holy cow, be careful about prepared tomato sauces. Prego packs a walloping 120 calories into a half cup. Hunts is 45 calories for a half cup. To be fair, Prego has no high fructose corn syrup and Hunts does. I made a judgement call the day I bought it and I sided w/diminished calories. I'll be looking around for a sauce that has lower calories and no HFCS.

-40 calorie a slice bread. Check it out. Back in the day, it was just smaller, skinny bread. Now it's just like commercial bread. I don't eat a lot of bread so the almost $3/loaf price doesn't bother me, but even so, it's either 69c/loaf for air bread and a fat ass, or $3/loaf for this stuff and a cuter ass. :D Some don't have HFCS, some do.

-Dreyers Slow Churned Rich and Creamy ice cream. Good stuff. The calories range from about 210 cal/cup to about 300 cal/cup, so you need to watch. Note that the calories stated on the package are for half-cup servings, but that's just too stupid to contemplate. It's not worth getting my hands cold and a bowl dirty for a half cup. I've doubled them to give the per cup calories above. A cup of ice cream is more than you think, and once you get used to eating ice cream out of a dish rather than the container.... ;)

I realize that not all of these will appeal to all people. For some, choosing a product with HFCS is no longer something they'll do. And some people eat way more organically than I do. But, FWIW, I thought I'd share those.

I'd like to hear other people's methods for keeping lardbuttitis at bay.

These are great tips...I tend to use Skimmed Evaporated milk in place of cream or half/half in recipes and can make some to die for Alfredo Sauce with a fraction of the calories because I do not use butter or cream but do use really good Parmesan cheese. You are right about Parmesan...it packs a wallop for the amount of calories involved.

I prefer to eat as "naturally" as possible but sometimes there IS better living through chemistry especially when calories are concerned. Butter Flavored Extract, Butter Buds liquid (for cooking) or shaker type and the Molly McButter Flavorings can add zing for minimum calories. I prefer to have a squeeze of lemon and a dash of Tabasco on my baked potato but sometimes I want the taste of butter. If I have the "calorie" room I will use a "butter type" spray, if not I will use Molly McButter.

I gave up sour cream years ago...I LOVE the stuff...but use either blended cottage cheese or tofu in its place. I get a protein boost too.

BTW, I do eat tofu and really like it. However, the tofu noodles like you mention I cannot hang with and I will eat almost anything. Because pasta is so calorie dense I try to avoid it and just use whole grains instead. If I do eat pasta is has soy in it or is whole wheat so that I am not just eating wall paper paste that sticks to my mid-section. (I am an apple's apple...I have a small fanny for a fat woman.)

One of my favorite diet tip that I have learned over the years (thanks to a promotion by Gold's Gym and the Washington Apple Marketing Board) was to eat an apple if hungry and before meals. I don't always get to eat the apple before meals but apples are very filling and actually can nip a munchy attack in the bud. This was not a tip I accepted gracefully...as a child we only had "Delicious" apples because they were cheap. I never understood why they were called "Delicious" because I thought they were yucky and mushy. However, when I read the apple idea I decided to find apples that I liked and really try this for 30 days. I needed something to help quell my appetite because some meds I was taking were notorious for causing an increase in appetite and serious weight gain. So, I went and found lots of different kinds of apples I really liked and by golly they have been a life saver because I still have to take meds that cause serious appetite issues and weight gain but I am at least not gaining weight and can deal with the appetite in part because of the apples.

Bagged salad is another invention that helps a lot. I can eat all the salad I want and use either FF Italian, Lemon Juice or Flavored Vinegar. Minimal calories but filling. I cannot stand to cut up salad. (Childhood trauma issues!)

So these are things that I do. I have had weight issues all of my life...I am either fat or dangerously thin (85 to 90 pounds) with being fat having the upper hand since developing a metabolic disorder more than 20 years ago. I gained over 100 pounds in less than a month. I have to say that was pretty earth shattering for someone who had weighed under 100 pounds.

I am constantly reading nutrition labels...dealing with fat, calories and carbs...trying to lose weight and being grateful when I don't gain weight. My last weight gain was when I quit smoking almost seven years ago and I am still trying to shed it. I think if I can ever get rid of that weight again that I will be on my way to losing even more, but as my endecronologist says...every year without weight gain is a good year. I think a REALLY good year would involve losing something. I never give up and I am always experimenting with ways to improve my diet and increasing my activity level.

So who else has diet tips to add!

I really really don't like apples (except w/a big honkin' slice of cheddar), but I wonder if pears would have the same effect. They're a lot alike in composition.

I agree the butter subs are a nice seasoning when one's really in the mood. I like Molly McButter.

Potatoes. I used to love them. Then I did a stint on Atkins (which only worked for me for about four weeks, then got so slow that I reverted back to counting calories) and learned about mashed cauliflower. I fell in love. One night I decided to make real mashed potatoes and they tasted like wallpaper paste to me (I cracked up when you used the same analogy about white pasta). I haven't eaten potatoes since. It's not deprivation for me at all, my taste simply changed.

All great ideas. I hope you and your endocrinologist find something that's effective for you soon.

However, another euphimism that I use about how something tastes as in "this beer tastes like donkey p***" is NOT based on direct knowledge. It is merely an educated guess. :beer:

Dear Sadie...

Pears might well do the job...since I learned about this study and tried it, the price of pears has been so high that I have been able to get a 3 pound bag of apples for what one pound of pears costs so I have seldom had pears long enough to find out if they work or not. I do know that when I eat a good pear at any time the velvety richness is simply luxurious.

As for mashed cauliflower...I love that stuff...I first tried it when I was doing a nightshade free diet for a while to see if it helped my lupus. It didn't and while that was a bummer I sure was glad to be able to eat tomatoes again! A year without a single tomato was horrid!!!
