I've never made egg salad and would love a recipe, but nothing with celery in it ( LOL, DH hates celery, and its not a must for me, i've heard some people make it with celery).

I make ours just like chicken & tuna sald, only with eggs. I also use only half the yolks. I use miracle whip and a little mustard. And then some relish, and we use celery (optional http://community.otwa.com/infopop/em.../icon_wink.gif) and some freshly ground pepper.

I use hard-boiled eggs, chopped chives, a little sweet pickle relish, salt, pepper, mayo and (like JunkMom) a little yellow mustard. http://community.otwa.com/infopop/em...icon_smile.gif There are other things you could put in it, depending on your taste...chopped onion, minced garlic, etc. You could easily substitute chopped parsley (or even cilantro, if you like it) for the chives. If your DH doesn't mind the taste of celery (just the texture of it), then you could substitute celery salt for the regular salt. You could substitute dill relish for the sweet, or leave it out.

mines boring.....just plain old chopped eggs, salt, pepper, dab o'mustard & hellman's light mayo.
gets rave reviews, but it's just plain, basic egg salad.

I add a dash of worcestershire, salt, pepper, garlic powder, a little mustard (dry or dijon), and cooked bacon. And, of course, mayo.

With any hard boiled egg dish, the biggest problem people have is properly boiling the eggs. I'll explain exactly how to boil the perfect hardboiled eggs below:
Basic recipie:
Hard boiled eggs: Place eggs in cool water and slowly bring to a boil. When at the boiling point, remove from heat and cover, set aside for 20 min.
After the 20 min, shell the eggs. Best done under running cool water. Be sure to begin breaking the shell from the top or bottom looking for the inside airpocket.
Chop the egges to desired consistancy. Add in desired chopped veggies and mix lightly so as to not mush the egg content. For texture and flavor, add finely diced Valdalia onions..very finely diced.
Then add Mayo, spices (salt, pepper, paprika), and mix lightly.
That's a basic egg salad.
But you can add any varity of veggies an even meats to compliment eggsalad. Don't be shy...think scallops, artichokes, peas, cheese, bacon, olives...it's limitless!

I usually do the Hellmans,grey poupon, and the eggs, but when I want a little more pizzazz I add some horseradish.
