Quick? Fast meals for rush days?
What do you fix when you are in a rush or planned on dining out and it didn't materialize, or when you just forgot to plan or thaw? I'm guilty of the same old, same old when time is short (spaghetti, mac & cheese, blt, grilled cheese, oatmeal) - so post your ideas here and give me some new ideas! I, um, had cornflakes and peaches last night...

I've usually got a couple of cans of soup in the pantry, but now that I'm watching what I eat, I realize that canned soup isn't necessarily a good choice. :o
I've usually got enough stuff in the pantry to pull something together--tuna salad, pasta (which I can't have right now either), etc.
Also these days I've usually got a fridge full of veggies. So, I can always make a large salad and toss in some tuna or salmon or cheese.
If I've got eggs or fake eggs, I'll make an omelet or frittata. Actually my omelets always seem to get sort of messed up so I turn them into frittatas! LOL!! :D

When my kids were younger, it seemed like we always had those sports things at 6pm. Left me less than an hour to get everyone fed and ready to go.
We had "freezer dinners" on those days. Not all that nutritous, but it was better than hot dogs at the game. I could get from freezer to table in 20 minutes. Frozen popcorn shrimp, frozen fries, a tube of Pillsbury dinner rolls: turn on the oven, lay 'em out on the baking pans, and stick 'em in. While they're cooking, throw together a green salad or microwave some broccoli, frozen peas, or green beans.

Now that brought a lot of memories of long ago Little League summers! Little brother played, dad umpired, Mom & I worked in the concession stand - and that was the standard meal for many a day.
I try to keep some grilled chicken on hand to toss on a salad, but many of my choices don't fall into the "good for you" food group.

I TRY to keep some of those Stouffer individual serving frozen things on hand....lasagna, spaghetti, macaroni & beef, stuffed peppers, etc. ....for nights I just flat forgot to thaw anything out or didn't plan ahead.
If I'm short on time...I buy one of those Tyson already cooked whole chickens (They're actually pretty good) that all you do is microwave them for 6 - 7 min. and whip up fries or open a can of green beans & potatoes. I can have a whole meal done in about 15 - 20 min.
On nights I have plenty of time, but just didn't plan very well....we do "breakfast at night". Scrambled eggs, bacon, sausage, canned biscuits and home-fried potatoes.
And if all else fails....Sonic is only about 5 min. from my house. :D

I seem to operate along the same lines at NotMe.
I keep some Tyson's southern fried chicken fillets in the freezer along with mashed potato nuggets so I can whip them out, fix up really quick and while they're heating, I open up & heat a can of country gravy or sometimes use a mix with milk.
Makes really quick chicken fried steak meals, freezer to table in less than 15 minutes. I also use a canned veggie for a side that only needs to be heated and not cooked for 2 hours.

Slightly different take on mac 'n' cheese.
Boil the mac as usual. Then use a jar of Tostitos Salsa con Queso (by the tortilla chips in the grocery store) as the cheese sauce. It gives it a spicy taste that's just a little different from every day.
I like mine naked, but almost any leftovers or a can of tuna can be added if just macaroni isn't your thing.

One of my favorite quickies is using Liptons Creamy Parmesean noodle sidekick and add a can of tuna.
Makes a quick hearty meal of creamed tuna on toast.

Top Ten Fast Fixes
By Julie Miltenberger
These easiest-on-you recipes are made for the days when the kitchen is the last place you want to be: They make the most of tomatoes, peppers, zucchini and more by matching them up with some of our favorite prepared ingredients. You'll be in and out of the kitchen lickety-split. Please note, all of the recipes make from 4 to 6 servings.
Cheesy Pasta Chop artichokes from 1 jar (6 ounces); combine with 1 chopped ripe beefsteak tomato, 1/8 teaspoon each salt and black pepper. Stir in artichoke marinade. Meanwhile, cook 1/2 pound pasta. Drain; toss with sauce and 4 ounces cubed smoked mozzarella or gouda.
Chicken Skewers
Reserve liquid from 1 can (20 ounces) pineapple chunks. On skewers, thread pineapple, 3 small chicken breast halves cut into chunks and 1 each red and green pepper, cubed. Make glaze from 1/2 teaspoon each garlic powder and ground ginger, 3 minced scallions, 3 tablespoons soy sauce and reserved liquid. Heat; add 1 tablespoon cornstarch mixed with 1 tablespoon water; bring to boil. Brush glaze on skewers while grilling 4 to 5 minutes per side.
Fiesta Zucchini
Sauté 2 shredded zucchini and 1 small sliced onion in 2 tablespoons oil about 5 minutes; stir in 2 cups corn kernels and 1 cup salsa. Cook 2 minutes, or until tender. Serve with grilled chicken or pork.
Flank Steak Salad
Combine 3 cloves minced garlic, 1 cup orange juice, 1/2 cup balsamic vinegar and 1 teaspoon cumin for sauce. Set aside half. Marinate 1 1/2 pounds flank steak in remaining sauce for several hours in the fridge, then grill 6 minutes per side. Slice; toss with 12 cups salad greens, 1 large cucumber, sliced, 1 cup small tomatoes and remaining sauce.
German Potato Salad
Boil 2 pounds small red potatoes until tender; drain, cut in half. Combine with 3 slices cooked bacon, chopped, 1/2 cup bottled Italian salad dressing mixed with 2 tablespoons sugar. Sprinkle with 1/4 cup chopped parsley. Toss; refrigerate a few hours to let flavors blend.
Grilled Garlic Bread
Split a long Italian bread. Place, cut side down, on grill; cook until toasted, 2 minutes. Drain 1 can (6 ounces) chopped clams; reserve liquid. Mix 8 ounces cream cheese, clams, 1 tablespoon Worcestershire sauce,2 cloves chopped garlic and 2 tablespoons reserved clam juice. Spread over bread, dividing. Sprinkle 1 tablespoon grated Parmesan on each slice. Wrap loosely; grill 5 to 10 minutes, until heated through.
Nutty Soba Noodles
Cook 8 ounces soba noodles or spaghetti until tender; drain and rinse under cool water. Prepare sauce: Combine 1/2 cup each chicken broth and peanut butter, 2 tablespoons each soy sauce, rice-wine vinegar, sesame oil and hot chili sauce; toss with noodles. Top with sliced scallions and 2 cooked boneless pork chops, thinly sliced.
Sweet 'n' Tangy Bean Salad
Combine 1 can each drained red beans, black beans and cannellini beans. Add 4 ribs diced celery, 1 diced yellow pepper, 1/4 teaspoon hot pepper sauce, and 1/2 cup each diced red onion and bottled balsamic vinaigrette. Stir in 1 small can crushed pineapple with juice.
Tex-Mex BBQ Shrimp
Combine 1 cup ketchup, 2 tablespoons each vinegar and brown sugar, 1/2 teaspoon cumin, a pinch of cayenne and 1 can (4 1/2 ounces) chopped chiles. Brush half over 1 1/2 pounds cleaned shrimp; grill until done. Serve over cooked rice with reserved sauce.
Tortilla Wrap-up
Sauté 1 each diced red and green peppers, 1/2 teaspoon crushed fennel seeds, 1/2 cup each diced olives and red onion in 2 tablespoons olive oil for 7 minutes. Stir in 1 cup shredded cheddar. Toss with 1/2 pound smoked turkey cut in strips. Use to fill flour tortillas.

I've usually got enough stuff in the pantry to pull something together--tuna salad, pasta (which I can't have right now either), etc.
