A Tribute to Julia Child
Tomorrow, Sunday August 22, Food Network is having a (nearly) day-long tribute to Julia Child with re-runs of her shows, interviews, etc.

I loved (and still love) Julia Child. About ten years or so ago,I watched a show where she showed how to corn your own beef. I took notes and was able, to the best of my ability, duplicate her recipe! It is the best corned beef I (we) have ever eaten. What I like best about it is the fact that is looks natural and uses a fairly inexpensive cut of beef...doesn't have all the red food coloring or nitrates in it. Here's the recipe:
CORNED BEEF (HOW TO)
1-1/3 cups kosher salt
3 tablespoons sugar
1 teaspoon paprika
2 teaspoons allspice
2 teaspoons thyme
1 teaspoon sage
4 bay leaves, crumbled
8-9 pound bottom round beef roast
In a bowl, stir together all ingredients except roast. Rub the mixture well into the roast. Place in a plastic baggie with remaining salt mixture. Refrigerate on a tray or in a bowl for a minimum of 2 weeks (I used a plastic baggie). Massage the roast daily so the salt will penetrate.
I always cooked it in a crockpot and usually let it go as long as six weeks before doing so. It's excellent. I remember the first time I served it to company. They actually complained because it wasn't "red" but after they tasted it, they no longer complained.
After curing time, wash the roast and soak for 24 hours or longer. Place in crock pot along with some onion, celery, garlic and an herb bouquet and cover all with water. Cook a minimum of 8 hours. Serve with steamed vegetables.
