Old Fashioned Calorie Counting

I started out on Atkins. I lost 13 pounds in 48 days. That's a pound every 3.5 days - and that takes into account that first week when I lost six pounds, so actually results were slower. I don't blame Atkins; I just think I was eating too much food.

Started on good old fashioned calorie counting and lost an additional 10 pounds in 17 days. That's a pound every 1.7 days or twice as fast.

I'm being a fanatic. I eat 1000-1200 calories six days a week, and Sunday is my "party" day at 1500 calories. (Some party, huh?)

One thing that really helps me is meal planning. I like a decent supper, but breakfast and lunch are no big deal to me. So, I plan supper first thing in the morning, and then the rest of my eating is built around that.

Things that help:

Diet Ice Cream (I have a cup almost every evening), Diet Salad Dressings (can be used as "sauces" on meats also), and Diet Bread.

I made a list of my most often eaten foods with both the calories and the carbs. I keep a copy in the kitchen and one in the bedroom (since I do my meal planning over coffee in bed). This helps me to not guess.

A food scale. Also, I keep a 2T measure by the coffee, so I can count the half 'n' half I put in my coffee. The food scale, measuring spoons, and measuring cups are invaluable.

I have one of those 32 oz "biggie" glasses that I fill w/half crystal lite half water in the morning. I'm not a big water drinker, but at least I know that I'm getting this quart of fluids every day. I usually get more, but this glass helps me when I'm in coffee-all-day mode.

In the middle of the day, if I get really hungry, I eat two hard boiled eggs or something high protein (a good lesson on hunger from Atkins). I've tried salad, but it makes me hungrier - the eggs or a small piece of cheese make the hunger go away.

Future goals: More exercise.

Right now, I'm eating a lot of plain foods, so if anyone knows any decent low calorie recipes, I hope you'll share.

Sadie, thanks for starting this thread! :) See what I just posted in the Atkins thread. I think there will be quite a few recipes from other diet threads that fit here--esp. South Beach and I will try to cross reference everything that I notice and think fits elsewhere unless anyone has a better idea. At least it will keep me hopping and that works off the calories! ;)

I'll try to post some exercise articles and links soon, as it seems that might be of interest to some of us, too.

I go to Curves. (I think they're just about everywhere these days.) It's really not terribly expensive, but since I signed up for the contract deal and they charge my CC every month, I feel obligated to go as frequently as possible. Knowing that I have already paid keeps me motivated! :D

I got this online somewhere...I think maybe "3 Fat Chicks." One of the few diet recipes I kept eating when I was no longer dieting. Tasty...like a guilt-free quiche. ;) I eat half the pie (2 servings) with a side of veggies for dinner, which is still only 282 calories.

EASY GARDEN BAKE

1 cup chopped zucchini
1 large tomato, chopped (1 cup)
1 medium onion, chopped (1 cup)
1/3 cup grated parmesan cheese
1/2 cup Bisquick Reduced Fat baking mix
1 cup fat-free (skim) milk
1/2 cup fat-free cholesterol-free egg substitute
1/2 teaspoon salt
1/8 teaspoon pepper

Heat oven to 400º. Grease 9" pie plate and set aside. Saute zucchini and onions in a nonstick skillet which has been sprayed with nonstick cooking spray; saute about 3-5 minutes or until slightly softened. Combine with tomatoes and cheese and spread over bottom of pie plate. Stir remaining ingredients until blended. Pour into pie plate over vegetables. Bake about 35 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Serves 4

Calories - 141
Fat - 3.3
Sat. Fat - 1.6
Protein - 8.8
Fiber - 1.7
Sodium - 791
Carbohydrates - 19.5

Weight Watchers Points - 3

Edited to add a missing ingredient.

I hate bottled diet Bleu cheese dressing. This is so much better. I use it as both a dip and a nice thick salad dressing. If you'd prefer it with chunks, it's easy to make with a whisk.

BLEU CHEESE DIP/DRESSING

2 oz Bleu cheese; crumbled
1/2 cup Light mayo (I use Hellman's Just 2 Good)
1/2 cup no-fat sour cream

Place everything in food processor and process till smooth.
Chill.

22 calories per tablespoon

Those are great. I'm going to try the 'quiche' this week fersure.

It takes a mind switch to go from Atkins to calories. Often times the low calorie versions of products are higher in carbs. So, I've almost forgotten about things like diet mayonnaise and egg substitute. We don't have Hellman's here, but I'm going to check and see if Best Foods has a Just 2 Good.

Toke, thanks for those! I'm gonna try the quiche this week, too. I could even eat that for breakfast!

Sadie, Best Foods is the west coast version of Hellman's, so they probably do. I've never been able to figure out why they have different names for the same product in different regions. :chin:

YIKES!

I forgot to add an ingredient to the "Easy Garden Bake"...sorry!

You mix the last 4 ingredients with:

1/2 cup Bisquick Reduced Fat baking mix

I guess I should be fully awake before typing recipes. The Bisquick is pretty important. :rolleyes:

If you can edit my post for me Deb, that would be great. I'd hate for someone not to notice. The Bisquick should go between the Parmesan and the milk.
