Fish/Seafood
We had this easy recipe last night. It's quite healthy and even DH liked it! Only about 231 calories per serving. I served it on a bed of steamed spinach. This recipe comes from recipezaar.
Halibut with Garlic Mayonnaise-Parmesan Topping
Topping
2 tablespoons light mayonnaise
1 tablespoon lemon juice
1 clove garlic, very finely minced
1/2 teaspoon Dijon mustard or country-style dijon mustard
1 tablespoon grated parmesan cheese
1 thin green onion, finely sliced
1/8-1/4 teaspoon Tabasco sauce
Halibut
2/3 lb halibut fillets
2 teaspoons lemon juice
1/8 teaspoon salt
fresh ground black pepper
2 servings | 35 minutes 15 mins prep
1. To prepare the topping: Combine mayonnaise, lemon juice, garlic, mustard, Parmesan, green onion and Tabasco.
2. To prepare the halibut: Place fish on a broiling pan.
3. Sprinkle with lemon juice, salt and pepper.
4. Bake in a preheated 450-degree oven 12 minutes per inch of thickness, or until fish tests done.
5. Remove fish from oven and place a rack close to the broiling element.
6. Turn the oven to broil.
7. Spread the top of the fish with garlic topping.
8. Broil about 1 minute, or until golden.

This is approved for South Beach Phase I and is tasty and elegant enough for company.
Broiled Salmon with Creamy Lemon Sauce
1 tablespoon extra virgin olive oil
1 clove garlic, minced
1/4 cup lemon juice
2 tablespoons capers
1 teaspoon lemon-pepper seasoning
1/2 cup fat-free sour cream
1 1/2 pounds salmon fillet
Preheat oven to 350 F. Coat a baking sheet with cooking spray. (I've gotten hooked on the no-stick Reynolds Wrap--no spray needed and super-easy clean-up! :) )
Heat the oil in a small saucepan over medium heat. Add the garlic and cook for 1 minute. Reduce heat to low and stir in the lemon juice, capers and lemon-pepper. Cook for 5 minutes. Add the sour cream and cook for 5 minutes or until heated through.
Meanwhile, place the salmon on the baking sheet. Bake for 20 minutes or until it is just opaque. Serve with the sauce.
Serves 4.

Grilled Salmon
Marinate a big fillet, with skin on for a few hours or overnight.
Grill over high heat for about 5 minutes a side, lid closed.
Marinade:
FRESH tarragon and dill
1 or more chopped garlic cloves
Salt, pepper, red pepper flakes to taste
Balsamic vinegar
Olive Oil
Juice of 1/2 lemon
The marinade can be customized to your taste.
As posted over in the veggie thread, the marinade is great for grilled portobello mushrooms, roma tomatoes and asparagus. Grill all 4, chop the veggies and serve over rice.
