What's Cookin'?
This morning I seasoned and browned a couple of small cheap, very lean roasts and threw them in the crock pot with some onions and garlic. Nothing fancy, but it smells divine. Jitterbug fussed around and hollered at me when it was browning and hasn't left the kitchen all day which is very unusual--she's generally under the bed napping by 10 a.m. DH keeps coming downstairs, saying it's driving him crazy!
So, what's going on in your kitchen today?

This morning I harvested my herbs so I've been cleaning them & hanging them up to dry. I'm also in the process of making Tarragon Vinegar. I just need to drain it now and let it cool before bottling. So, my kitchen is a mess. Dinner tonight will be a green chili cheesburger without the bun and a salad. Easy.

My cabbage soup is ready and yummy and I have yogurt on that will be ready tomorrow.

OK. Tonight is left-over roast beef with some lettuce, tomatoes, salsa, avocado, red onion and low-fat sour cream for a quasi-taco salad.
What's up with the rest of you?

I cheated - or actually my wife did. She called a place that brought us complete, cooked meals tonight. Steaks, baked potatoes, salads and rolls.
It's like she could read my mind. :)

Well...it cooled off around here. We thawed some bean & pepper soup that I froze back in February. Excellent, if I do say so, myself. :D Went nicely with martinis. ;)

omelette
Since my DH took a silly 2nd shift factory job, I don't make dinners anymore. Very much a bummer, since I love to cook. I made myself a three egg omelette with parsley and basil from my garden with feta cheese. Then later, I picked up a $2.19 bar-b-q beef sandwich from the store. Very sad.
I used to make stuff like lamb kebobs on the grill, roast turkey breast, chicken curry, grilled pork chops w/carmelized onions. Just can't seem to get the motivation to cook good stuff when it's only me eating.

Whitey, I know exactly what you mean! When DH is gone on a trip I'm the worst at eating properly.
And since I'm on the South Beach thing, breakfast and lunch are the hardest for me, since those are my "alone" meals. I tend to eat things that are on the diet, but not the best choices. In other words, I skip the 2 cups of veggies that I'm supposed to have at lunch with my protein. And breakfast is frequently cottage cheese or yogurt with fake sugar and cinnamon, when it's supposed to have at least 1/2 cup of veggies with the protein.
I'm thinking that I should make some things like a crustless quiche/frittata, soup or whatever on the weekend that I can have for those meals. I guess I just need to discipline myself. :o

I wanted something sweet over chicken last night, so I experimented and it came out pretty good.
Sadie's Fruity Delicious Goodness to Pour Over Stuff
1 c seedless green grapes (114 cal)
1 c cut up apple (65 cal)
1 Tblsp corn starch (30 cal)
a splash of raspberry Crystal Lite (negligible calories)
1. Dissolve the corn starch in 1 c very hot water
2. Pulse the apples in a food processor a few times. You want small pieces, but not applesauce.
3. Pulse the grapes just enough to break the skins, but not enough to make them a squishy mess.
4. Put apples and grapes into a sauce pan and add about half the water/corn starch. Cook over med-high heat (stirring occasionally) until thick and bubbly. Add the rest of the water/corn starch and repeat.
5. At the very end, just splash some raspberry Crystal Lite into the sauce for color, though it does add flavor also.
Spoon over chicken or whatever meat you think this would work well with. (It might work well over vanilla ice cream or cottage cheese, also.)

Tonight will be a lime-marinated turkey breast. Grilled if it cools off enough later--otherwise oven-broiled. I think just a salad to go with unless I get a spark of energy and creativity.

Back to say that since I don't have any real cooking to do for tonight (with the leftovers), I decided to make a semi-version of Toke's vegetable quiche (can't remember the name). I just used stuff I had--zukes, onion, tomato, feta cheese, olives and oregano--had to leave out the Bisquick, cause I can't have that on the diet. This will be ready to go for breakfast or lunch for the next few days. :)

Pineapple Basil Chicken

I know just what you mean, wanting some sweet stuff over chicken. Me too, and I experimented tonight.
background info--on Friday we had pina coladas, so I had half a can of crushed pineapple, a whole fresh pineapple, and half a bottle of rum. Also I had some leeks that I got at a farmer's market. (What do ya do with leeks, besides vischysoisse?)
First I prepared rice, using chicken broth as the liquid and then I tossed in some raisins and grated carrot.
Then I cut up the fresh pineapple and sliced the leek thin--mostly only the white part and sauteed then in a generous amt. of butter--til the pineapple pieces got a nice golden brown.
In the meantime, I had two chicken breasts that I deboned and pounded so they were uniform width, put them on a plate with lots of salt and pepper and diced garlic--oh, I happened to have some plain yogurt, so I spooned a small amt. of that on the breasts too.
I removed the leek/pineapple mixture to a bowl, poured a thin layer of olive oil in the pan and sauteed the chicken breasts.
In the meantime I mixed in one of those large pyrex measuring cups--the half can of crushed pineapple, a bunch of fresh grated ginger, about 1/3 cup of tamari soy sauce, some water, a dash of vinegar, crushed red pepper, diced dried ancho chile, some chili powder, and a large amount of fresh basil from my garden. (Had to go out there with a flash light) cut into ribbons. (Chiffonade--pile the leaves on top of each other, roll up and slice thinly)
Remove the chicken breasts to a cutting board. Pour a few tablespoons rum into the hot pan of chicken drippings, Swirl around. Pour the measuring cup stuff into pan. Bring to boil and let reduce. Slice the chicken breast on the diagonal about 3/4 inch thick.
Then this is what I did that really made it look great. I have a nice platter--dump the rice on the platter and make a mound, then pour the sauce from the pan onto the rest of platter, then take the leek/pineapple mixture and make another mound of that, on top of the sauce, next to the rice. Then lay the chicken pieces over the pineapple chunks. Garnish with some sprigs of basil.
This was really delicious!

Today's meal. Two chicken salad sandwiches on Diet Bread (also diet mayo). An ear of corn w/some salt (for which I will surely retain water and watch the scale not move for days, but it was yummy). Perfect Sunday meal - boil water. :D

Tonight is "taco salad" such as it is. Can't have the usual chips & stuff, so it's extra-lean beef with taco spices, lettuce, black beans, green onions, cilantro, lettuce, tomato, black olives, avocado (just a bit), FF sour cream, LF cheese and salsa. I think that's it--am trying to hurry and get it together--we've got a Neighborhood Watch meeting tonight. Probably too much fat, but who's perfect? :o
Snowy, post those recipes!!! I can't have potatoes, but did order some leeks this week (I have fresh organic produce delivered every week. It is soooooo good!) and think I'll probably grill them as a side dish with steak.

I do my chili by taste, so the measurements are estimates....
About 30 oz. tomato puree
about 12 oz water
4-6 chopped garlic cloves
1/2 - 1 onion chopped (had a Vidalia today that I used)
about 1 TBS comino (cumin)
1-2 tsp salt
15 oz black beans
1 tsp paprika
dash cinnamon
sometimes I throw some corn in, sometimes I thicken the chili with masa.
Saute onions and garlic in a bit of oil for a few minutes (until eveyone wanders in the kitchen saying what smells so good), put in crock pot. Add tomato puree, water, beans, spices. Stir well and cook. I start on high for about an hour, then switch to low.
For the rice, it's one C brown rice to 1 C water, and I add 1/4 - 1/2 tsp tumeric and stir it in before cooking.
Be back with the soup recipe.

Well, DH has a dinner out tonight, so it's left-over taco salad for me.
I had a great lunch the past 2 days. I had the broth/drippings left from the roast beef that I made last week. It was really flavorful with the spices/herbs and onions. I added some chopped zucchini, tomato and garbanzo beans and had a really tasty soup.

DH is still in Chicago. Eating at Spiaggia tonight. If you've never been there it is to die for. :(
So for me, I'm concocting:
Red onion
A little bit of bacon, but not cooking in the grease (I'm allowed a little fat once in a while!)
Garlic
Fresh spinach
Cannellini (sp?) beans (I think they're AKA white kidney beans and am not sure they're allowed on South Beach, but what the heck--I'm a bachelorette tonight and going for the bacon, too!)
EVOO (extra virgin olive oil)
salt & pepper
splash of balsamic vinegar
I'm figuring I'll saute all of this. Anyone have any other suggestions?

Well, DH will be back in a couple of hours. And I have no idea whether or not he'll be hungry but I'm cooking anyway! I can only eat bachelorette food for so long!
I'm going to pan broil filet mignon. Then (in the same pan for the drippings) make a sauce of garlic, shallot, l-f sour cream, mustard, worcestershire sauce and paprika. May think of a few other things to toss in along the way.;) I sure wish I could some noodles to have the sauce over. :(
Then and I guess I should have started out with this as it takes longer, I'm oven roasting some fresh green beans, cauliflower and garlic. I'll cook them extra long cause I want them nice and toasty brown with a little crispiness on the tips.:tasty: May seem like a strange combo, but I was really craving southern style fresh green beans with new potatoes and this was something that fits the diet and "might" satisfy that craving.
Edited to change the onion to shallots--forgot I had 'em. And to say that DH just called and said he's just leaving the airport and he ate on the plane a couple of hours ago and isn't hungry. :rolleyes: Oh well! I'lve already got stuff going so will proceed as planned, eat my meal and have a left-over steak to slice and serve over greens one night. :)

OK! Tonight was the left-over filet sliced up thin over a bed of herbs and lettuce. Few black olives tossed in and a bit of sliced tomato. Then the left-over roasted veggies with Gabriel's creamy dressing (see my note in that thread). We both loved it!! :tasty:
