South Beach Diet Recipes and Discussion

I'm starting a special thread here for SBD stuff. (I urge those of you on other diets to do the same for your diets!) :)

I've been in Phase I of the SBD for nearly 4 weeks now. In the first 3 days I lost 4 pounds. I was so excited. Then nothing. :banghead: Finally this last week I lost another 1/2 pound. This morning in the newspaper there was an article about weight loss/control. It said forget all the counting carbs, fat, etc. Just count calories and eat whole grains.

So, I decided after I read that to give up South Beach and just start counting calories. Then I went to Curves. I'd lost another 1/2 pound since Thursday! :) So, I figure a total loss of 5 pounds in 4 weeks ain't so bad and I'm sticking with it. I must have been in some sort of holding pattern. :chin: I'll stay with Phase I (even though I'm sick of it.) until I lose at least 8 pounds. Then on to Phase II!!

How's everyone else doing that is trying to lose?

Suitable for Phase I

Brazilian Halibut

2 Tablespoons lemon juice
3 Tablespoons very strong coffee
1 Teaspoon onion powder
1/4 cup olive oil
2 Halibut steaks/fillets
1 Tablespoon chopped shallot or red onion
2 Tablespoons chopped parsley

Combine first 4 ingredients. Pour over halibut and marinate for 30 minutes. Broil halibut, reserving marinade and basting after turning.

Note: I served this with Cheesy Artichokes . I also saved the remaining marinade, heated it and added a touch of Equal. Then served the halibut over a bed of lettuce and tomatoes with the marinade/dressing over all.
