In case you run out of de-caf tea...

Just use regular tea and follow these directions:

Just prepare your tea the usual way and allow it to stand about 45 seconds. Pour off the resulting brew and brew the same tea leaves again. This is a good method for decaffeinating Black and Oolong teas. In the case of Green tea, I would suggest brewing the tea the normal time of 2 to 3 minutes. Then discard the liquid and brew the leaves again. Green teas, unlike oxidized teas (Black and Oolong teas) actually taste better the second time around. Tea experts refer to this tea method as "second infusion" tea. Tea that has been given the 45 second treatment will have about 90 to 95% of the caffeine removed. However, keep in mind that by discarding the first brew, you are also losing the many antioxidants, vitamins and minerals that are generated. (Even commercial decaf tea--or coffee--is not completely caffeine-free) Since tea varies in content from 10 to 50 mg per cup, this will result in a brew very low in caffeine.

I just realized that I forgot to credit that. It came from a tea newsletter called Tea Connections (I think.). :o

THAT explains why I like to only brew my black teas for a maximum of 60 seconds! (I get the good part of the taste and most of the caffeine!)

I brew up a gallon of strong tea every day or two. It includes some black generic and Darjeeling tea, but mostly a variety of 4 different green teas. I keep the black separate from the greens so I can pull the black tea out first.... I leave the green tea in for at least 10 minutes. (sometimes for a couple hours, cause I forget...)

Sometimes I throw in some ginger slices. Mmmmm.

I love ginger tea! Really helps to settle an upset tummy.

Listen to some deeply informed knowledge about how to choose, prepare and consume tea that was presented in the September 2nd 2004 Herbal Highway Show available (soon) in the KPFA Herbal Highway Archives. In a future show, additional tea recipes will be presented.
