Here's a great recipe for using all those tomatoes in your garden! :tasty: This sauce is great over pasta, stuffed peppers, as a substitute for red sauce in lasagna, as a substitute for regular canned tomato sauce in any recipe. Best of all, it's easy to make. You don't even have to skin the tomatoes. Freezes well too! I make it in big batches.


(ROASTED) TOMATO SAUCE

Preheat oven to 475 degrees.

1/2 c. olive oil
1 T. chopped fresh herbs (such as basil, rosemary and thyme)
1/2 t. coarsely ground black pepper
1 stalk celery, chopped
1 carrot, chopped
1 small onion, chopped
5 garlic cloves
1 1/2 lbs. tomatoes, cored
1/4 c. balsamic vinegar
Salt and freshly ground black pepper to taste

Place the 1/2 c. olive oil, chosen herbs, pepper, celery, carrot, onion and garlic in a roasting pan. Place the tomatoes on tops of the vegetables and roast until the tops of the tomatoes are brown, about 45 minutes. In a food processor, puree the mixture until smooth. Add the vinegar and blend. Season with salt and pepper. Makes approximately 3 cups.

Sounds good, Crowsnest. I have masses of tomatoes, so I'll try this out.

Ah, for the fresh tomato taste in the dead of winter....

More on Roasted Tomato Sauce

We are having better weather now and the tomatoes are making a comeback. However, this time of the year, I'm tired of fooling with them (it's time to put the garden to bed until next year). I've made and froze spaghetti sauce, Creole sauce, and the Roasted Tomato Sauce. At a loss today, I made more of this sauce and added four fresh jalapenos (skin on, but partially seeded). Wow! What a taste sensation. This is going to be really good in Mexican recipes.

My palate is salivating when I think of covering a beef, turkey or chicken loaf (or crab cakes) with this new, improved sauce. My grandkids love just the regular sauce on mac 'n cheese! Imagine. :rolleyes:

Waaaahhhhh

I didn't get any this year. I planted 2 rows of plum tomatoes hoping to get enough to do up some sauce. Everything was going great, they got flowers & then tiny green tomatoes. Then we had a few days of rain & the plants all turned black and the tiny green tomatoes all fell off. :(

I was thinking it was my fault till I talked to my mom & neighbor, they both had the same problem. Though my neighbor said she got to eat 2 early tomatoes before her plants all died.

Yep, ladygodivat, we here in the NW have had a very unusual summer as far as gardening is concerned. Maybe next year will be better for us. If so, try the recipe for Roasted Tomato Sauce. I think you will enjoy it.
