Hors d'oeuvres/Appetizers/Snacks

I usually serve this with the little cocktail rye bread or Rye-Krisp, but you could even use it as a sandwich spread.

Roast Beef and Radish Spread

Ingredients:
1 8-ounce package cream cheese, softened
2 tablespoons mayonnaise or salad dressing
2 tablespoons Dijon-style mustard
1 teaspoon prepared horseradish
3/4 pound cooked beef, finely chopped
1/2 cup finely chopped radishes
2 green onions, finely chopped
Bread or crackers (RyeKrisp is great!)
Directions:
In medium bowl beat cream cheese, mayonnaise or salad dressing, mustard, and horseradish with an electric mixer on low to medium speed until fluffy. Fold in beef, radishes, and green onion. Cover and chill in the refrigerator at least 3 hours or overnight. Serve with bread or crackers. Makes about 2 1/2 cups.

NOTES: Neuchatel (low-fat) cheese can be used instead of cream cheese. I use the food processor to chop the radishes. Take them out and then chop the roast beef. Take that out and mix the cheese, etc. Then fold the cheese mixture together with the beef and radishes.

My Grandma always called these Hors d'oeuvres...

I consider it more of a snack or something. :)

It's sounds yucky...but they are REALLY GOOD if you can't make up your mind between something salty or something sweet. They're the perfect combo! :)

Grandma's Hors d'oeuvres

Saltine Crackers
Cheese Slices (I use Kraft American)
Marshmallows (I use the mini ones, but the original recipe used large ones)


These are made in "fours".
Take a slice of cheese fold it into four pieces.
Put each piece on a saltine cracker.
Put one large marshmallow or five (5) mini ones on top.
Put this on a cookie sheet and put it in the oven (on broil) until the marshmallows are toasted golden brown.
Serve Hot! :)

Makes however many servings you want it to....:D

Freezer Guacamole

When you get a good buy on avocados, freeze some quacamole!

FREEZER GUACAMOLE

2 ripe avocados
2 medium-sized tomatoes
½ teaspoon Tabasco
1 bunch green onions or scallions, finely chopped
2 teaspoons salt
2 tablespoons lemon juice

Place tomatoes in boiling water for 1 minute, rinse in cold water, peel off skin, and chop finely. Combine all ingredients. Spoon into 1-1/2 pint Ball Can-or-Freez jar. Seal tight. When ready to serve, thaw and stir thoroughly. Makes 3 cups, or enough to serve 12.

Beef Roll Ups

Carl Buddig sliced beef (there are 10 slices per bag)
1 block cream cheese
chopped scallions with some of the greenery, about 3
horseradish to taste, I do about 1 1/2 tsp
couple shakes Westershire(sp?) sauce

Soften cheese then add scallions, horseradish, & sauce. Spread cream cheese mix on the flat pieces of beef and roll into little jelly rolls. Refridgerate for a couple of hours. They need to be chilled before you slice them or they will mush down. Cut into pieces suitable for spearing with toothpicks. I usually cut each one into three pieces unless I need to stretch them out.
