Casseroles and/or Easy Pot-Luck Dishes
OK folks, I am truly not a whiz in the kitchen, unless it involves Cheese Whiz and crackers...everyone groan now. :tongue: I do find myself needing to make casseroles for pot-lucks, etc. My only real winner was the good old rice, cheese, and broccoli recipe. However, I am not posting that now, because I forgot how to make it...OK, I don't want to get up to go to the kitchen.
Here is an older thread , which I bookmarked for future reference. There are a few good ones included there.
Let's see some more! I will start out with one from yet another Texas magazine. My thanks to Julie Hampton for this recipe, which sounds yummy...minus the bell peppers for me. ;) I would probably substitute chopped green onions for those. Oh, it is also low-carb!
Squash Casserole
1 tablespoon butter
1 roll (1 pound) Italian sausage, browned
1 pound yellow squash
1/2 cup mayonnaise
1/2 cup chopped onion
1/4 cup chopped green bell pepper
1/2 cup pecan pieces
1/2 cup shredded Cheddar cheese
1 large egg
Parmesan cheese
Preheat oven to 350 degrees. Grease bottom and sides of casserole dish with butter. Brown sausage. Slice squash. Mix together mayonnaise, onion, bell pepper, pecans, cheese and egg. Add squash and browned sausage. Put mixture in casserole dish.Top with Parmesan cheese. Bake 40-50 minutes. Serves 8-10. :tasty:
Serving size: 1 scoop. Per serving:
379 calories, 12 grams protein,
36 grams fat, 5 grams carbohydrates,
549 milligrams sodium,
76 milligrams cholesterol
I feel sure that I could make a meal out of this...OK, not at 1 sitting. How am I going to lose those 15lbs again? :chin:

Hashbrown Casserole
I'm not sure where this recipe came from, perhaps a magazine. It's easy and a real crowd pleaser.
HASHBROWN CASSEROLE
2 lb bag frozen cubed hashbrowns
1 can cream of chicken soup
1 cup sour cream
1/2 cup butter, melted
2 cups grated cheese
Salt & pepper to taste
Mix all ingredients together and put in a greased 13x9" baking pan. Bake for one hour at 350. Cover halfway through if you don't want your potatoes real brown.
