Chocolate Pudding - Help please

Wah! Chocolate pudding (Jello Cook & Serve NOT instant) is one of my favorite "comfort foods." Well, it must not be anyone else's anymore, I can't find the darned stuff anywhere. Instant has taken over - I can't even find Royal or any funky brands anymore, although once in a while I find a lonely box of cook and serve vanilla.

I tried making a recipe for chocolate pudding - yuck! Okay immediately, but then it started to almost immediately separate into its composite parts and looked revolting.

So - do you have a good recipe for chocolate pudding? Is there some kind of jello type "mix" I could make? Have you seen the boxed stuff anywhere???

Well according to the web site they still make it. You might ask your grocer to order it for you.

I'll check around for recipes and see what I can come up with. Or, if you'd like I'll check at my grocery stores to see if they have it--I can always ship it!! :)

Thanks....I emailed them to make sure it wasn't being discontinued. I don't know if people have stopped carrying it because sales are slow, or what. I like other flavors too, but it needs to be cooked, not instant. I still have to check Publix, it's a no show at Winn Dixie, Kash n Karry, Sav a Lot, Albertsons had a few big boxes but they looked icky. :(

Pudding & Pie Mix

This recipe is out of Make-A-Mix Cookery. I've never tried it though. You make the mix first and then add ingredients for chocolate pudding.

5-1/2 cups sugar
2-3/4 cups all-purpose flour
1 teaspoon salt
1-1/2 cups instant nonfat dry milk

In a large bowl, combine sugar, flour, salt and dry milk. Mix well. Put in a large airtight container. Label. Store in a cool, dry place. Use within 6 to 8 months. Makes about 9 cups of Pudding & Pie Mix.

Variation: If you prefer cornstarch puddings, substitute 2 cups cornstarch for all-purpose flour.

To make your chocolate pudding:

1-1/4 cups Pudding & Pie Mix
1/4 cup sugar
1/4 cup cocoa
2-3/4 cups milk
2 eggs, well-beaten
1 teaspoon vanilla
3 tablespoons butter or margarine

In a small bowl, combine Pudding & Pie Mix, sugar and cocoa until well-blended. In a heavy saucepan, combine cocoa mixture and 1 cup of the milk. Stir until smooth. Gradually add remaining 1-3/4 cups milk and cook over medium heat about 5 to 7 minutes, stirring constantly, until mixture boils and thickens. Remove from heat. Gradually add half of hot mixture to the beaten eggs in a medium bowl. Mix well. Blend egg mixture slowly into the remaining hot mixture in saucepan. Cook about 1 minute, stirring constantly, until mixture just begins to boil. Remove from heat. Stir in vanilla and butter or margarine. Cool.

Doesn't say how much this will make except that it is enough to fill one 9-inch single-crust pie.

I used to be hardcore against instant pudding because it always came out gritty. But I began making the instant a few weeks ago and either they changed their mix or it's because of the way I prepare it but it comes out creamy and smooth every time now! I use an electric whisk and beat it for about 3 minutes.

Crows Nest - Thanks! I just printed that out and will give it a try as soon as I need "comfort food" again!

Cassie - I'm odd - I don't like instant because it is too smooth - and doesn't have the gunky layer on the top!! :D

I had to find this in my files...but it is easy and cheap...

Chocolate Pudding Mix Chocolate Pudding Mix
2 1/2 cups instant nonfat dry milk
5 cups sugar
3 cups cornstarch
1 teaspoon salt
2 1/2 cups unsweeteened cocoa

Mix all ingredients together until they are well blended. Store in a large airtight container or jar.

To use: Make sure you stir mix before using - then measure out 2/3cup of mix in a medium saucepan. Add 2 cups milk, one teaspoon vanilla and one tablespoon butter and cook over low heat stirring constantly until mixture comes to a boil. Continue cooking and stirring for one minute. Remove from heat - cool. May be placed in individual serving bowls then cooled.


Hope this fits the bill...we have "chocky" pudding lovers around here and this works and is cheap...I use whatever kind of milk is cheapest when I make the final product...evaporated (adding water to make 2 cups), dry or fresh. With milk prices being so high(in Arkansas anyway) surprisingly evaporated milk is on sale cheap on a regular basis so I have been using that because we don't use milk for much but cooking anyway...so I don't have to worry about waste...

Overall this is lots cheaper than the store bought kind...
