Does anyone know how to best preserve Parsley?
I have a LOT of parsley that I just cut from my garden. It's way more than I can use in a short time. What I've found on the Internet says that it should be frozen rather than dried.
Do any of you have experience with saving parsley for the winter? What works? What doesn't work?

I don't freeze my parsley. I cut it, bring it in, wash and spin dry it. I put it on a cookie sheet. I turn my oven to warm for 1 minute. Then I turn it off. In goes the parsley and usually sometime the next day it is dry enough to crumble and put away in an airtight container. Usually I only cut enough to take me through the next growing season. It always smells fresh when I use it. While I've never frozen parsley, seems to me it might be somewhat slimy when defrosted? I don't know. But, I do have some parsley left in the garden and just might try freezing some to see what happens to it after defrosted.

The site I saw, sorry, I didn't save the link, said to freeze it in a brick and then cut off whatever you wanted to use for soups etc. They went on to say that frozen parsley should only be used in things you intended to cook further. It wouldn't make a nice garnish.
Freezing it sounds like a pain in the neck to me. I think I'm going to try drying it.
I did plant a hanging basket earlier this summer and I plan to bring that in shortly so I'll have a little bit of fresh parsley for the winter.
