Anybody have a good ricotta cheesecake recipe?

I've always been a cream cheese in the cheesecake kind of gal, but Publix had ricotta BOGO, and there's only so much lasagna and stuffed shells I can do, LOL!

I need a recipe, or if not, any adjustments that I would need to make to convert my recipe from cream cheese to ricotta.

Thanks a bundle!

(PS - gotta make this ASAP because I'm trading DH desserts for math tutoring and proofreading all my research papers! Finals week are begins on Wednesday, heaven help me!)

Thanks, Cariad!

You got a date for that! I'll be childless the whole month, with only summer school math hanging over my head.

back to the salt mines, a/k/a research papers.....
